This Sancerre, made from 40-year-old sauvignon blanc vineyards, preserves the essence of the grape with floral, mineral, and ground coffee bean smells and flavours of citrous and white peach. A little portion of the wine was matured in older wood, but the fruit from this vineyard is robust enough to absorb it, giving the wine structure and substance. With its sharp acidity and fruit, this is an excellent wine to pair with both a fish meal cooked with fava beans.
