Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel Giboulot has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). The vines are organically grown. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
Jean-Michel Giboulot cultivates less than one acre in this appellation, from which he extracted this sophisticated wine (undergrowth, leather, red fruits, spices), lively, rich, meaty, and well structured by tight tannins but without harshness. A bright future is on the horizon.
