Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel Giboulot has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). The vines are organically grown. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
This wine is a dazzling crimson in colour, with aromas of black fruits (blackcurrant, blackberry) and red fruits (cherry, gooseberry), as well as humus and underbrush. It develops notes of truffle, leather, and spices as it ages. In its youth, it entices the palette with the flavour of crisp fresh grapes. It evolves with time, presenting a solid and utterly solid structure that is firm, upright, and full of juice.
