Castagna - Sparkling 'Allegro' Ancestrale 2018

The Castagna's mission, is to make wine which is the expression of the place where it is grown, stylistically making classic old-world wine with new-world fruit.The vineyard is fully certified both organic and biodynamic and they are one of only four Australian producers invited to be a member of La Renaissance des Appellations an organic association founded by biodynamic pioneer Nicolas Joly which invite exclusively organic producers with outstanding quality and commitment.

Allegro, is a sparkling made in  accordance to the 'Ancestrale' method meaning, the wine makes a single fermentation in bottle to obtain alcohol and mousse. Attractive perfume of strawberry kissed with lemon and faint vanilla notes. The palate is creamy yet brisk in acidity, intensity of red berry flavours is inherent but there’s a kick of saline tang in too. It feels quite complex, a touch savoury, concentrated in flavour and bustling with fine bubbles. Very fine sparkling.
