Valpolicella Ripasso DOC is a second fermentation of Valpolicella wine which is allowed to spend 15/20 days on the previous year Amarone's lees to add structure and longevity. Compared to Valpolicella, the alcohol content is higher, the acidity lower, the roundness more marked and the values of the phenolic substances and extracts are higher. It has a slightly ethereal perfume of red fruits with notes of vanilla. The palate is harmonious, round and velvety.
