Jonathan is the fifth generation of Pabiot’s to have toiled the soils of Pouilly, one of only three organic growers in an appellation comprised of nearly 150 domaines, and now they are venturing beyond, with the transition towards biodynamics.
Assembling the fruit from four- to ten-year-old vines in all the vineyards of the domain and aged in stainless steel for 6 to 8 months, the 2019 Pouilly Fume Prelude is the early bird of the vintage. Ripe, elegant fruit aromas, elegant and aromatic Pouilly with vivacious acidity and a long and aromatic finish.
