Wild Nature wines, symbolise the outmost care and respect for the soil, terroir and the environment where these wines come from. Pioneers in organic farming since 1974, each Wild Nature bottle's label is dedicated to the wildlife inhabiting their estates, located in Venice and Verona provinces, to further stress their effort to maintain a balance ecosystem and respect for plants and wildlife.
The Amarone della Valpolicella DOCG is obtained with a unique technique, that has been used since Roman time, called “appassimento”. The grapes are naturally dried for 3 to 4 months in the drying facility (fruttaio). During the drying process the grapes dehydrate losing 40-50% of their original weight with a consequent concentration of all their substances. During the month of January the grapes are pressed, and then the fermentation process proceeds for a month. Maturation is completed in French oak barriques and tonneaux for a period that may vary from 42 to 50 months. Then the wine is allowed a further one year aging in bottle. Complex nose of ripe red plum, sultanas, hints of spices and dry fruits scents. The palate is dense and silky showing the patient maturation process and the indulging flavours of plum, rhubarb and their endless variations.
