Dessert Wine

Grapes are harvested at an extended time on the vines to achieve high sugar concentration, e.g. Late harvest, which is raisinated. Another well known type of dessert wine is made from "Noble rot", which is a spore called Botrytis Cinerea. It contributes unique flavours of honey, ginger and saffron. Sauternes in France is the most well known region to produce this type. To keep the sweetness, fermentation will be halted and resulted in a very high grape sugar is left. They are usually golden in colour and luscious, very long finish.
